Ingredients
- 500g beef, cut into cubes
- 2 tablespoons massaman curry paste
- 1 can (400ml) coconut milk
- 2 potatoes, peeled and cut into chunks
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon fish sauce
- 1 tablespoon tamarind pulp
- 1 tablespoon palm sugar
- 1 cinnamon stick
- 3 cardamom pods
- 2 bay leaves
- 1 cup roasted peanuts
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

Heat oil in a large pot over medium heat. Add the curry paste and cook for 1-2 minutes until fragrant.

Add the beef and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onions and garlic. Cook until onions are translucent.

Return the beef to the pot and add the potatoes, coconut milk, fish sauce, tamarind pulp, palm sugar, cinnamon stick, cardamom pods, and bay leaves.

Bring to a boil, then reduce heat and simmer for 1-2 hours until the beef is tender.

Stir in the roasted peanuts and cook for an additional 10 minutes.

Serve hot over cooked rice and garnish with fresh cilantro.
