How To Make Slow Cooker Beef Chuck Recipe
Tender beef chuck slow-cooked to perfection with aromatic vegetables and rich broth.
Serves:
Ingredients
- 2 lbs beef chuck roast, trimmed of excess fat
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp salt
- ½ tsp black pepper
- 2 cups beef broth
- 2 tbsp cornstarch
- 2 tbsp water
Instructions

Season the beef chuck with salt and pepper.

In a slow cooker, add the diced onion, sliced carrots, celery, garlic, and dried thyme.

Place the beef chuck on top of the vegetables.

Pour beef broth over the beef chuck.

Cover and cook on low for 8 hours.

Once the beef chuck is tender, remove it from the slow cooker and let it rest for 10-15 minutes before cutting.

In the meantime, strain the cooking liquid and return it to the slow cooker.

In a small bowl, mix cornstarch and water to create a slurry.

Turn slow cooker on high and add the cornstarch slurry to the cooking liquid. Stir well.

Let the cooking liquid thicken for about 10-15 minutes.

Serve the beef chuck with the thickened cooking liquid and vegetables.
