Ingredients
- 3 lbs beef chuck roast
- 2 tbsp olive oil
- 2 tbsp minced garlic
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 cup red wine
- 1 onion, chopped
- 3 carrots, chopped
- 3 potatoes, chopped
Instructions

Preheat oven to 350°F.

Mix together garlic, thyme, rosemary, salt, and pepper in a small bowl.

Rub the mixture evenly over the beef roast.

Heat olive oil in a large Dutch oven or oven-safe pot.

Sear the beef on all sides until browned.

Add the chopped onion, carrots, and potatoes to the pot.

Pour in the beef broth and red wine.

Cover the pot and place in the oven for 4-5 hours.

Beef is done when it’s tender and falls apart easily with a fork.

Serve hot with mashed potatoes or rice.
