How To Make Beef Bourguignon

Ingredients
- 2 pounds beef stew meat, cut into chunks
- 1/4 cup all-purpose flour
- 4 tablespoons olive oil
- 4 slices bacon, chopped
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups red wine
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme leaves
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large bowl, toss the beef chunks with flour until evenly coated.

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat. Add the bacon and cook until crispy. Remove the bacon and set aside.

In the same pot, add the remaining 2 tablespoons of olive oil and brown the beef in batches until it is evenly browned on all sides. Remove the beef and set aside.

Add the chopped onion, carrots, and garlic to the pot and cook until softened, about 5 minutes.

Return the beef and bacon to the pot. Stir in the red wine, beef broth, tomato paste, thyme leaves, and bay leaf. Season with salt and pepper.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2 hours or until the beef is tender.

Remove the bay leaf and adjust the seasoning if needed.

Serve the beef bourguignon hot, garnished with chopped fresh parsley.
