Ingredients
- 1.5 lbs beef stew meat, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions

In a large pot, heat some oil over medium heat. Add the beef stew meat and cook until browned on all sides. Remove from the pot and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.

Add the diced tomatoes, kidney beans, beef broth, tomato paste, dried thyme, and dried rosemary to the pot. Stir to combine.

Return the browned beef to the pot and bring the mixture to a boil. Reduce heat to low, cover, and let simmer for 2 hours or until the beef is tender.

Season with salt and pepper to taste.

Serve hot in bowls, garnished with fresh herbs if desired.
