Ingredients
- 2 cans of white beans, drained and rinsed
- 2 cups of vegetable broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp of dried thyme
- Salt and pepper to taste
- 2 tbsp of olive oil
- Chopped fresh parsley, for topping (optional)
Instructions

In a large pot, heat olive oil over medium heat.

Add onion and garlic, and cook until softened, about 5 minutes.

Add the drained and rinsed white beans, thyme, and vegetable broth.

Simmer for 20-25 minutes, or until the flavors have melded together.

Season with salt and pepper to taste.

Use an immersion blender or transfer to a high-speed blender to purée until smooth.

Serve hot with chopped fresh parsley (optional).
