How To Make White Bean and Vegetable Curry Recipe
A flavorful and nutritious vegetarian curry with white beans and vegetables in a creamy coconut sauce.
Serves:
Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tsp curry powder
- 1 tsp cumin
- 1 tsp coriander
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 can of diced tomatoes (14.5 oz)
- 1 can of coconut milk (13.5 oz)
- 1 can of white beans, drained and rinsed (15 oz)
- 2 cups of mixed vegetables (carrots, bell peppers, zucchini, etc.)
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot or Dutch oven, heat the oil over medium heat.

Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for another minute until fragrant.

Add the diced tomatoes and coconut milk and bring to a simmer.

Add the white beans and mixed vegetables and simmer for 10-15 minutes until the vegetables are cooked and the sauce has thickened.

Season with salt and pepper to taste.

Serve over rice or with naan bread and garnish with fresh cilantro.
