How To Make White Bean and Kale Soup Recipe
A hearty soup packed with fiber, protein, and vitamins.

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 4 cups vegetable broth
- 2 cans white beans, drained and rinsed
- 4 cups chopped kale, stems removed
- Salt and pepper to taste
Instructions

In a large pot, heat olive oil over medium heat.

Add chopped onion and sauté until softened, around 5 minutes.

Add minced garlic and dried thyme and stir for 1-2 minutes until fragrant.

Pour in vegetable broth and bring to a boil.

Reduce heat to low and add drained white beans and chopped kale.

Simmer for 15-20 minutes until kale is tender.

Season with salt and pepper to taste.

Serve hot with crusty bread or crackers on the side.
