How To Make White Bean and Kale Soup Recipe

A hearty soup packed with fiber, protein, and vitamins.

Serves:

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 4 cups vegetable broth
  • 2 cans white beans, drained and rinsed
  • 4 cups chopped kale, stems removed
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add chopped onion and sauté until softened, around 5 minutes.

  3. Add minced garlic and dried thyme and stir for 1-2 minutes until fragrant.

  4. Pour in vegetable broth and bring to a boil.

  5. Reduce heat to low and add drained white beans and chopped kale.

  6. Simmer for 15-20 minutes until kale is tender.

  7. Season with salt and pepper to taste.

  8. Serve hot with crusty bread or crackers on the side.
