Ingredients
- 1 cup mixed legumes (such as lentils, chickpeas, and kidney beans), soaked overnight
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 1 cup chopped tomatoes
- 6 cups vegetable broth
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions

In a large pot, sauté the onion and garlic in a little bit of oil until fragrant.
