How To Make Mediterranean Legume Stew

A hearty and healthy stew with Mediterranean flavors.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic, cook until softened.

  3. Add red bell pepper and spices, cook for 2 minutes.

  4. Add diced tomatoes, chickpeas, kidney beans and vegetable broth.

  5. Bring to a boil, reduce heat and simmer for 30-40 minutes.

  6. Season with salt and pepper to taste.

  7. Garnish with fresh chopped parsley.
