Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup vegetable broth
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic, cook until softened.

Add red bell pepper and spices, cook for 2 minutes.

Add diced tomatoes, chickpeas, kidney beans and vegetable broth.

Bring to a boil, reduce heat and simmer for 30-40 minutes.

Season with salt and pepper to taste.

Garnish with fresh chopped parsley.
