How To Make Legume Tacos Recipe

Ingredients

  • 1 can mixed legumes, drained and rinsed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 garlic clove, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 taco shells
  • Toppings: shredded lettuce, diced tomatoes, avocado, sour cream

Instructions

  1. Heat olive oil in a pan over medium heat. Add onion and garlic and sauté until softened.

  2. Add mixed legumes, chili powder, cumin, paprika, salt, and pepper. Cook until heated through.

  3. Divide the mixture evenly among the taco shells.

  4. Top with shredded lettuce, diced tomatoes, avocado, and sour cream.

  5. Serve and enjoy!
