Ingredients
- 2 cans kidney beans, drained and rinsed
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup frozen corn
- 1 tsp cumin powder
- 1 tsp paprika powder
- 1/4 tsp chili powder
- 1/2 cup vegetable broth
- 1/2 cup shredded cheddar cheese
- 2 tbsp chopped fresh cilantro
- Salt and pepper, to taste

Preheat oven to 375°F.

In a skillet, sauté onion and garlic until softened.

Add in bell pepper, corn, cumin powder, paprika, and chili powder. Mix well.

Stir in kidney beans and vegetable broth, and let simmer for 10-15 minutes.
