Ingredients
- 1 lb fava beans, shelled
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped scallions
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions

Bring a pot of salted water to a boil. Add fava beans and cook for 5-7 minutes until tender. Drain and rinse with cold water.

In a bowl, mix together fava beans, feta cheese, parsley, and scallions.
