How To Make Chickpea and Vegetable Stir-fry
A delicious and healthy vegetable stir-fry with protein-packed chickpeas.

Ingredients
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tsp ground cumin
- Salt and pepper, to taste
- Fresh cilantro, chopped, for garnish
Instructions

Heat oil in a large skillet over medium heat.

Add onions and bell peppers, sauté for 5 minutes.

Add garlic, chickpeas, soy sauce, cumin, salt, and pepper and stir until heated through (about 5 minutes).

Garnish with fresh cilantro and serve.
