How To Make Chickpea and Tomato Soup Recipe
A hearty and healthy soup packed with fiber-rich chickpeas and juicy tomatoes.

Ingredients
- 1 can of chickpeas, drained and rinsed
- 2 large tomatoes, chopped
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups of vegetable broth
- 1 tsp of cumin
- 1 tsp of paprika
- 1 tbsp of olive oil
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot and add onion and garlic, saute until fragrant.

Add chopped tomatoes, cumin, paprika, salt and pepper and stir.

Add chickpeas and vegetable broth and bring to a boil. Simmer for 20-25 minutes.

Blend soup with an immersion blender until smooth.

Serve hot and garnish with fresh herbs.
