Ingredients
- 2 cans cannellini beans, drained and rinsed
- 1 red onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/4 cup vegetable broth
- 1/2 cup shredded mozzarella cheese
- Salt and pepper, to taste
Instructions

Preheat oven to 375°F (190°C).

In a large skillet, sauté onion, bell pepper, and garlic over medium-high heat until softened, about 5 minutes.

Add in cannellini beans, oregano, basil, vegetable broth, salt, and pepper. Cook until heated through.

Transfer the mixture to a casserole dish and sprinkle shredded mozzarella cheese over the top.

Bake for 20-25 minutes, until the cheese is bubbly and golden brown.
