- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- 2 cans cannellini beans, drained and rinsed
- 4 cups vegetable broth
- 1 bunch kale, stems removed and leaves chopped
- Salt and pepper to taste
Instructions

Heat oil in a large pot over medium heat. Add onion and cook until soft.

Add garlic, cumin, paprika, and chili flakes. Cook for 1-2 minutes until fragrant.

Add cannellini beans and vegetable broth. Bring to a boil.

Reduce heat and simmer for 15-20 minutes.
