Ingredients
- 2 1/2 cups granulated sugar
- 1 cup water
- 2 tablespoons agar agar powder
- 1/2 cup corn syrup
- 2 teaspoons vanilla extract
- 1 cup powdered sugar, for dusting
Instructions

In a medium saucepan, combine the granulated sugar and water. Heat over medium heat until the sugar has dissolved.

Add the agar agar powder and corn syrup to the saucepan and stir well. Continue to cook over medium heat until the mixture reaches 240°F (115°C) on a candy thermometer.

Remove the saucepan from heat and let it cool for 10 minutes. Stir in the vanilla extract.

Using an electric mixer, beat the mixture on high speed for about 10 minutes until it becomes thick and fluffy.

Grease a square baking dish and dust it with powdered sugar. Pour the marshmallow mixture into the dish and smooth the top with a spatula.

Let the marshmallows set at room temperature for about 4 hours or until firm. Once set, cut into squares using a sharp knife.

Dust the marshmallows with powdered sugar to prevent sticking.
