Ingredients

  • 1 pound turkey breast, cut into fingers
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 avocados, mashed
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • 1/2 tsp cumin
  • 1/2 tsp chili powder

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a shallow bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

  3. Dip each turkey finger into the breadcrumb mixture, coating evenly. Place on the prepared baking sheet.

  4. Bake for 15-20 minutes, or until the turkey is cooked through and the breadcrumbs are golden and crispy.

  5. While the turkey is baking, prepare the avocado dip. In a bowl, mix together mashed avocados, Greek yogurt, lime juice, chopped cilantro, cumin, chili powder, salt, and pepper.

  6. Serve the turkey fingers hot with the creamy avocado dip.
