Ingredients
- 1 pound chicken gizzards, cleaned
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- Vegetable oil, for frying
Instructions

In a large bowl, combine the chicken gizzards and buttermilk. Let them soak for 10 minutes.

In a separate bowl, mix together the flour, salt, paprika, garlic powder, onion powder, and cayenne pepper.

Heat vegetable oil to 350°F (175°C) in a large skillet or deep fryer.

Drain the buttermilk from the gizzards and dredge them in the flour mixture, coating them evenly.

Carefully add the gizzards to the hot oil and fry for 5-7 minutes, or until they are golden brown and crispy.

Remove the fried gizzards from the oil and place them on a paper towel-lined plate to drain excess oil.
