Ingredients
- 1 sheet of puff pastry
- 200g chorizo sausage, diced
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 garlic clove, minced
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions

Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

Heat a skillet over medium heat and add the diced chorizo. Cook until crispy, then remove from the skillet and set aside.

In the same skillet, add the diced red bell pepper, onion, and minced garlic. Cook until softened, about 5 minutes.

Add the smoked paprika, dried oregano, salt, and pepper to the skillet. Stir to combine well.

Roll out the puff pastry sheet on a lightly floured surface. Cut it into 4 equal rectangles.

Divide the cooked chorizo and vegetable mixture among the puff pastry rectangles, placing it in the center of each one.

Fold the puff pastry over the filling, and seal the edges by pressing them together with a fork.

Transfer the sausage rolls onto the prepared baking sheet, and brush the tops with the beaten egg wash.

Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and crispy.
