How To Make Raspberry, white chocolate & pistachio profiteroles

Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/2 cup raspberries
- 1/2 cup white chocolate, melted
- 1/4 cup chopped pistachios
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium saucepan, bring water and butter to a boil over medium heat.

Reduce heat to low and add flour, stirring vigorously until the mixture forms a thick dough.

Remove from heat and let the dough cool slightly. Add eggs, one at a time, beating well after each addition, until the dough is smooth and glossy.

Transfer the dough to a piping bag fitted with a large round tip.

Pipe small mounds onto the prepared baking sheet, leaving space between each.

Bake for 20-25 minutes or until the profiteroles are golden brown and puffed.

Remove from the oven and let them cool completely.

Once cooled, cut the profiteroles in half horizontally.

Fill each bottom half with a raspberry and a drizzle of melted white chocolate.

Place the top half back on and drizzle more melted white chocolate over the profiteroles.

Sprinkle with chopped pistachios.
