How To Make Peanut Satay Noodles Recipe
A rich and flavorful noodle dish with creamy peanut satay sauce.
Serves:
Ingredients
- 8 oz. rice noodles
- 2 tbsp sesame oil
- 1 red bell pepper, sliced
- 1 ½ cups broccoli florets
- 1 cup sliced carrots
- 1 cup sliced snow peas
- 2 garlic cloves, minced
- 1 tsp fresh ginger, minced
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 2 tbsp honey
- 1/2 tsp red pepper flakes
- 1/4 cup warm water
- Chopped peanuts and green onions for serving
Instructions

Cook rice noodles according to package instructions.

Heat sesame oil in a large pan over medium-high heat. Add red bell pepper, broccoli, carrots, and snow peas and cook for 5-8 minutes, or until veggies are tender.

Add garlic and ginger and cook for an additional minute.

In a separate bowl, whisk together peanut butter, soy sauce, honey, red pepper flakes, and warm water.

Add peanut sauce to the veggies and stir until well combined.

Drain rice noodles and add to the pan with the veggies and sauce. Toss until everything is evenly coated.

Serve with chopped peanuts and green onions.
