Ingredients
- 300g chicken livers, cleaned
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tbsp butter
- 2 tbsp cognac or brandy
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup heavy cream
- 2 tbsp fresh parsley, chopped
Instructions

In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

Add the chicken livers to the skillet and cook for about 5 minutes, until they are browned on the outside but still slightly pink on the inside.

Remove the skillet from heat and let it cool for a few minutes. Transfer the mixture to a food processor.

Add the cognac or brandy, dried thyme, salt, and black pepper to the food processor. Blend until smooth and creamy.

Gradually add the heavy cream while continuing to blend, until the desired consistency is reached.

Stir in the chopped fresh parsley.

Transfer the pâté to small ramekins or a serving dish. Smooth the top with a spatula.

Refrigerate for at least 1 hour to allow the flavors to develop.

Serve chilled with toasted baguette slices or crackers.
